Surprise Ingedients

Lacking in meal planning inspiration, I've turned to the Food Network for some help. I found just what I needed today. Giada De Laurentiis made a simple chicken soup with some surprising ingredients...lemon juice, Parmesan cheese rind, and spaghetti noodles.

This recipe was perfect because I had just cooked up some chicken and had a pot of chicken stock all ready to go. The only ingredients we didn't have were fresh parsley (I used dried), a bay leaf, and Romano cheese for a garnish. We gave it a try and...WOW!...it was really good! The flavor was very different and VERY delicious. If you'd like to give this recipe a try, you can find it HERE.

We have an abundance of lemons on our tree this year so anything with lemon right now is a good choice. We enjoyed this soup with a fresh, red leaf lettuce salad with garlic, lemon juice and olive oil dressing, and some fresh baked bread. Mmmmmm!

Sounds SO good! I've had a lemon chicken soup with rice (it's kind of a Greek soup) that was awesome. This sounds similar. I'm going to give it a try. Thanks for sharing!

At our date night we went to Corona. In the Barnes and Noble I started talking to a fellow knitting book enthusiast. It ended up being Sue Iverson from Murrieta. She knows Cally and Susan. Do you know her? She teaches 8th grade in Perris. So funny.

Wow! That DOES sound good and I'm going to the grocery store tomorrow night. Guess what we are having this week?

It must be cool being able to go out and pick lemons from your own tree. I'm yellow...errr...green with envy.
